Minestrone Soup and Kale Chips Recipe

Okay folks, today we have a two-for-one! Two great recipes that go perfectly together.

First up is Rhonda from ShadowJewels with her Delicious Minestrone Soup! 



Vegetarian Minestrone Soup

Okay, I confess that I never use a recipe or measure anything to make soup, I just throw things in until it turns out right. Everyone is asking me for this recipe, so today I am writing it all down as I go. It's a hearty, nutritious soup that is perfect for warming you up this time of year.
This is for an extra large pot of soup. It freezes well in serving size containers for a quick, healthy lunch. The best part about making soup yourself instead of using canned (besides how good it tastes), is the wholesome lack of unpronounceable ingredients. No carageenan or sodium guanylate in here!

Carrots for better eyesight
1/2 stick butter (or 1/4 cup olive oil)
1 bunch carrots with tops on
3 stalks of celery
2 leeks
2 large 30 oz cans kidney beans
2 large 28 oz cans diced tomatoes
12 cups water
better than bouillon vegetable base
Italian herbs
5 small potatoes, chopped
2 cups chopped green beans
1/4 cup chopped celery leaves
1-1/2 cups chopped zucchini
3 cups whole wheat pasta shells

Wash and dice the carrots, celery, and leeks.
Do not be afraid of leeks if you have never cooked with them! They look like giant green onions, and add a rich flavor. Cut off the very bottom, and a few inches of the top. Cut off the white part in one chunk, and dice that. Now peel the layers of the green part, throwing away the outer dark green layer. Rinse each layer well. Dice all of the lovely light green parts. See, it was easy!

Now add the butter to your giant soup pot, and melt it over medium heat. Add the chopped vegetables and cook, stirring occasionally, until the flavors are happily married and the vegetables are translucent (about 10 minutes).

Add the 2 cans of kidney beans and 2 cans of diced tomatoes, liquid and all. Stir in 12 cups of water. Add 2 Tablespoons of Italian herbs, salt and pepper to taste, and 2 heaping teaspoons of "better than bouillon". This is your secret weapon. It comes in a glass jar, in the soup aisle right next to those nasty bouillon cubes. Don't measure it, just add 2 big glops. If your soup tastes too watery at the end, add more.
Cook over high heat until it comes to a boil; reduce heat and simmer 30 minutes. Peel and chop the potatoes and chop the zucchini while it cooks.

Add the potatoes and green beans. Simmer another 30 minutes.
Add the celery leaves, zucchini, and pasta. Simmer another 30 minutes or until the pasta is done. Let it sit for an hour or so before serving. Sprinkle with parmesan cheese. Yum!

* 1 pound bunch of dinosaur kale (or whatever kale you can find!)

* 1 tablespoon plus 1 teaspoon olive oil

* Any seasoning you’d like: Old Bay Seasoning, Grill Seasoning, smoky paprika, chili flakes, sea salt and coarse black pepper. (I love garlic salt on them!)

 Great source of Iron, Calcium, Vitamin C, Vitamin K & Vitamin A
Preheat oven to 275 degrees. Thoroughly clean and dry kale leaves. Remove the fiberous center stalk from the kale by tearing the leaves away from the stalk. The center stalk will bake up very tough, that’s why we remove it.

Place kale leaves on one or two baking sheets. Leaves should be in a single layer for the most part. Sprinkle with olive oil and seasoning. Toss with your hands. Add more seasoning if you’d like. (I actually pile them up on the cookie sheet because they lose a lot of volume as they bake, but be sure you have a little oil and seasoning on the whole pile)

Place pan(s) in the oven and bake for 15 minutes. Remove sheet(s) and toss leaves with tongs. Return to the oven to bake for another 15 minutes. after 30 minutes of baking, turn the oven off and allow the leaves to dry in the cooling oven for another 30 to 45 minutes. They’ll be crisp and ready to snack on in no time!
Store kale chips in an airtight bag. They’ll last for several days.

Today we have with us Peg of AbacusBeadCreations (ABC) who designs gorgeous gemstone jewelry inspired by nature. I am sure every lady would love to own at least a piece of Abacus Bead Creations as an essential accessory. So let's do away with all the formalities and jump right into mind of the artist!

ISD Tell us something about your jewelry and materials you like to use?
ABC The elements I like to use in my jewelry are natural gemstones, shells from the sea like paua and mother of pearl, and Swarovski crystals
Gemstones are my favorite because of the range of colors that can be found and the earthy feel it gives to my pieces.

ISD When and why you started creating jewelry?
ABC My sister got me started with a gift certificate to a craft shop. When I went there to spend it I couldn’t find anything I wanted and then I found a small section of beads and wire. This was before the jewelry making craze had really started – about 10 years ago. Well, I now have an entire room of my house crammed full of beads!
ISD When you create a piece what part of the process is your favorite? Designing, assembling, searching for parts and purchasing beads...
ABC Ooo, that’s a tough question.  A lot depends on my mood. 
When I have a lot of design ideas floating around in my head then I sit at my bead board and lay out designs for new pieces. I have three bead boards with multiple rows on each one so I can have several projects going at the same time.

If the creative juices aren’t flowing and I feel the urge to bead then I stock up some of my best selling items like my multistrand seed bead necklaces. These take hours to make, but I enjoy the way these repetitive patterns calm my soul. And then there are days when I’m just not in the groove. That’s when I go bead hunting all over the internet looking for gemstones in fresh colors and shapes to inspire new creations. I must have a lot of those kind of days judging by the piles of beads I’ve got!

ISD What does handmade mean to you?
ABC Creating a handmade gift for someone is like sharing a part of you with them. It’s not something you went to a store and bought. It’s something that didn’t exist until you created it. It means so much more.

Giving a gift of a handmade item is like that too. It means you took the extra time to find something handmade that fits that person’s personality. It also shows your admiration for the artist who created a wonderful new piece of art.

ISD What is your is your inspiration?
ABC My inspiration is nature. I use a lot of green, brown, and earthy tones in my work. I also use sea shells and mother of pearl. I guess it helps me to commune with nature when I am stuck inside my house instead of being outside in the woods or on the lake where I’d rather be.
ISD What do you like to do at your free time?
ABC The town where I grew up is a beautiful place on Lake Michigan. There are miles of sandy beaches and state parks to explore. I was lucky to spend a lot of time sailing all around these pristine waters. There are fun things to do year-round in northern Michigan - camping and hiking through the woods picking mushrooms or berries or whatever is in season, ice fishing and cross country skiing in the winter. It’s a fantastic place to live!
ISD Can you recommend us nice book?
ABC Reading is how I wind down at the end of the day. I get in my favorite chair and settle in with my blanket, a cup of cocoa and a good book. Usually my kitty makes herself a spot and cuddles up with me. My favorite genre is fantasy. I love the mystical world of sorcerers, imaginary lands, and the never ending battle between good and evil.
Some of my favorite fantasy authors are Robert Jordan, L.E. Modesitt, Jr., Terry Goodkind, and George R. R. Martin.

Potato Leek Soup

Potato Leek Soup recipe

Hi, Rhonda here from ShadowJewels, with a wonderfully delicious cold weather recipe to warm you up! My husband has requested that I make a pot of his favorite soup, potato leek (and how can I say no to someone so cute?). This is another one that I don't use a recipe for, so I'll write it down for you all as I go along.


Potato leek soup
Ingredients
• 1/2 stick butter
• 2 leeks
• 3 medium carrots
• 2 stalks celery
• 12 cups water
• "Better than Bouillon" vegetable base
• rosemary
• sage
• herbs de provence
• 12 cups diced potatoes



Preparation
• First prepare the leeks. Cut off the very bottom, and a couple of inches from the tops.
• Now remove the white part in one chunk, rinsing well, and dice into small cubes. Start to peel the leek apart one layer at a time, discard the tough outer layer of greens. Rinse thoroughly as you work, saving all of the lighter green parts. Dice into small pieces.
• Rinse and chop the carrots and celery.
• Melt the butter in a large soup pot and add the chopped vegetables.
• Cook over medium heat until the vegetables start to turn translucent and the flavors are well blended, about 10-15 minutes, stirring occasionally.
• Add the water, salt and pepper to taste, 2 spoons of the better than bouillon, 1 tsp dried sage leaves, 1 tsp herbs de provence, and 1 tsp dried rosemary (or a few sprigs of fresh rosemary if you have it).
• Bring to a boil, reduce heat and simmer 30 minutes.
• Add the potatoes, bring back to a boil, then simmer 30 minutes more, or until potatoes are tender.
• At this point, you can leave the soup as is and serve chunky style; or you can make a cream soup by blending  it with a hand held mixer, or in your blender.

• Then stir in  a small carton of cream or half and half. Reheat if necessary, but do not boil once the cream is added.
• Serve with grated cheese.

November Mosaic

November retained its name from the Latin novem meaning "nine". The first week of November has always been a time of festivals and celebrations marking the end of the harvest and
beginning of Winter.


November's birthstones are the topaz (particularly, yellow) and the citrine.
