Sparkling Green Tea

Sparkling Green Tea

A refreshing and easy to make warm weather beverage. Plus it has all the benefits of green tea!


Brewed and cooled Green Tea 
honey or simple syrup or sugar
Plain or Lemon flavored Seltzer water

If using sugar or honey, it's best to add them while the tea is still hot. I make a batch of simple syrup and keep it in my fridge for using in my iced coffees and for iced tea. Simple syrup is just equal parts sugar and water, brought to a boil and simmered for 3 minutes, then cooled down and stored in a covered container in the fridge.

To make the sparkling tea, pour equal parts cooled, sweetened tea and seltzer water in an iced filled glass. Add a teaspoon or however much you'd like of the simple syrup to sweeten.

One of my favorite things to make is homemade pizza. I love a classic thin crust with some fresh mozzerella,  garden tomatoes, and fresh basil. I also love to try new and adventurous pizza toppings. Here are a few yummy recipes for you to try.

A very useful tip I've learned from making homemade pizza is to bake the pizza until just about done and then take it off the pan and cook a few minutes more directly on the oven rack. This extra step allows the middle of your crust to crisp up a little more.

Easy Healthy Homemade Yogurt

Here is a recipe that is super easy and is super healthy for you and your family, Homemade Yogurt! Yes, it is so easy to buy yogurt, but the problem with commercially produced yogurt is that the fermentation period is so short, usually less than an hour. For yogurt to be truly beneficial, a longer fermentation is needed. This recipe uses a crock pot to let the yogurt ferment and grow all those healthy probiotic cultures.



Homemade Yogurt
8 cups organic or raw milk (I use 1%, but you can use whole or skim)
4 tablespoons plain Greek yogurt as starter (once you've made yogurt, you can keep this amount of your homemade yogurt for the next batch as your starter)
A slow cooker/crock pot

1. Pour milk into a pot and heat on the stovetop until temperature reaches 185 degrees F. You can use a kitchen thermometer if you have one, but if you don't, the milk will be slightly bubbly and frothy but not boiling.
2. Let milk cool down until it reaches about 100-110 degrees F. Again use the thermometer, the milk will be warm to the touch.This takes about 8-10 minutes. While milk is cooling, turn your crock pot to low.
3. Add the plain Greek yogurt to your crock pot and stir in 1 cup of the cooled milk. When it is completely mixed in, add the rest of the milk from the pot. Stir.
4. Put the lid on the crock pot. Turn off the crock pot. Cover with a thick towel and leave at room temperature for at least 8 hours. You can leave the yogurt to ferment for up to 24 hours.
5. When time is up, set crock pot in refrigerator for a few hours to help the yogurt set. (Do NOT stir! It's important for the yogurt to not be disturbed for this time so it will properly set.)
A yummy berry, pineapple, yogurt smoothie!

The yogurt will keep in the fridge for up to 14 days. You can stir in honey or agave to sweeten and it's delicious with fresh or frozen fruit and in smoothies! You can try different kinds of milk or half and half to find the consistency that you like. And you can strain the yogurt through cheesecloth to make a thick Greek style or yogurt cheese!

Luscious Lemon Bars

Luscious Lemon Bars

Delectable, fresh, vibrant lemons are the star in these yummy bars. 
I make these all the time in the spring and summer and they are fabulous. 
These have slightly less fat then traditional Lemon Bars as I have cut down 
on the butter and only use 1 whole egg.  


Crust:
1 cup flour
1/4 cup sugar
1/2 cup quick oats
5 Tablespoons butter, softened
Topping:
1 whole egg 
1 egg white
1 cup sugar
3 Tablespoons flour
1/4 teaspoon baking powder
pinch of salt
juice and zest of 1 lemon
powdered sugar for dusting 

Heat oven to 350 degrees F. Grease an 8 inch square baking pan. Mix flour, oats and sugar in medium bowl. 
Cut in butter until crumbly. Press crumbs into baking pan. Bake 10-12 minutes until edges are golden brown.
In a large bowl, whisk together egg and egg white. Add sugar and beat until creamy and light in color. Add flour, baking powder, salt, lemon juice and lemon zest. Whisk until smooth. Pour lemon mix over hot crust. Bake 20-25 minutes until center is set. Cool 15 minutes in pan and then remove from pan to cool completely. Sprinkle powdered sugar on top and cut into squares to serve. 

Tip: Limes can also be substituted for the lemon in these bars.

Healthier Chocolate Chip Cookies

In my quest to create recipes for healthier snacks, I have struggled with this one, probably my favorite snack of all.  I've tried many batches with different modifications, some better than others.  If you also long for crunchy, chocolatey goodness, but are tired of pre-packaged snacks full of high fructose corn syrup, too much salt, and even weirder stuff like sorbitan monostearate, this is the recipe for you.  Even my super picky health food freak of a husband goes for these (love you honey!).


1 cup soft butter
2/3 cup packed brown sugar
2 eggs
1-1/2 tsp vanilla

1-1/4 cups white wheat flour
1 cup almond meal
1/4 tsp salt
1 tsp baking soda

1 10oz bag dark chocolate chips
1 cup chopped nuts
1 cup dried fruit

Cream the butter, sugar, eggs, and vanilla together.  Blend the dry ingredients, then stir into the butter mixture.  Add the chocolate, nuts and fruit and stir until well mixed.
Bake at 375* for about 10 minutes, just until the edges are starting to brown.

Easy peasy!  Now, I wouldn't go so far as to call these "healthy snacks", because they do have a lot of calories and you probably shouldn't eat a whole plate of them at once.  But they have a lot less sugar and salt, and way more fiber than packaged cookies.  If you are really brave, omit the salt completely and cut the sugar down to 1/2 cup.  There is plenty of sweetness in the chocolate and fruit.  If you can't find white wheat flour (I get mine at Trader Joe's), then use a mixture of whole wheat and plain white flour.  You can substitute wheat flour for the almond meal if you can't find that.

I love almonds! They are a great snack and healthy for you too. Almonds contain healthy fats, vitamin E, magnesium and potassium. This is a great way to jazz them up a bit and it makes a great party snack.

Ingredients:
1 egg white
1 teaspoon of cold water
4 cups whole almonds
1/2 cup of white sugar
1/4 teaspoon of salt
1/2 teaspoon ground cinnamon

Preheat oven to 250 degrees F. Lightly grease a 10x15 jelly roll pan. (or use a Silpat nonstick mat on the pan).
Lightly beat the egg white in a large bowl. Add the water, and beat until frothy but not stiff. Add the almonds and stir until well coated. In a separate bowl, mix the sugar, salt and cinnamon and sprinkle over nuts. Toss to coat, and spread evenly on the prepared pan.
Bake for 1 hour, stirring about every 15 minutes, until golden. Allow to cool and store in an airtight container.



You can switch the white sugar to brown sugar for a little darker color and you could add a teaspoon of vanilla for a different flavor.

Bread Pudding with Bourbon Sauce

A wonderfully rich, warm and gooey Bread Pudding recipe with a creamy Bourbon sauce. An extra special dessert for your next occasion.



~12 Servings

Pudding
3/4 cup raisins
2 TBS rum

1 lb French bread, cut into 1-inch cubes
3 cup milk (do not use lowfat or skim)
1 cup half and half
3 eggs beaten to blend
2 cup sugar
3 TBS unsalted butter, melted
2 TBS vanilla 
1/2 tsp ground cinnamon

Sauce
1/2 cup (1 stick) unsalted butter 
1/2 cup firmly packed golden brown sugar
1/2 cup sugar
1 egg
3 TBS Bourbon (or whiskey)

For pudding: Place raisins in a small bowl with rum.  Let soak 20 minutes.

Preheat oven to 325F.  Generously butter a 13x9x2 baking pan.  Place bread in large bowl.  Pour milk and half and half over bread.  Let soak 5 minutes.  
Whisk eggs with sugar, butter, vanilla, and cinnamon.  Pour over bread; add rum soaked raisins and toss together to coat.  Transfer bread mixture to prepared 
pan.  Bake until top is deep golden brown (bread may puff above rim of pan), about 1 hour.

For sauce: Melt butter with both sugars in heavy saucepan over low heat, stirring until sugars dissolve.  Whisk egg in small bowl to blend.  Gradually whisk in some
of the melted butter mixture.  Return mixture to saucepan and whisk until smooth, 1 minute.  Do not boil.  Whisk in bourbon (or whiskey)

Serve pudding with sauce while warm or reheat.  Add French vanilla ice cream or homemade sweetened whipped cream.

Mulled Spiced Wine

I first tried "Gluhwein", mulled spiced wine, last year at the Christkindl Market here in Chicago. This wine based beverage is served warm to warm you up on the coldest of winter days. Here is a simple recipe for you to give it a try.This recipe can be made and served in your Crock Pot or a large pot on the stove.

                                                 32 oz. Apple cider
                                              32 oz. Red wine
                                              1 orange, sliced thin
                                              a handful of cinnamon sticks
                                              1 teaspoon ground cloves
                                              sugar to taste
      --Mix all ingredients in a large crock pot slow cooker. Simmer 2-3 hours. Serve warm.

Gingerbread House Fun

Every year around this time my two girls and I make a gingerbread house. We have so much fun putting it all together and decorating it with colorful gumdrops and candies. It is a wonderful memory making experience. This year we are going to try something new. If you have ever watched any of the cake competition shows on Food Network you know that they use rice krispie treats for a lot of their cake construction and I thought that would be a great way to do a gingerbread house. And what do you know, I was at my local Target and what did I see? A kit for a Crispy Rice House. Perfect! It comes with the cereal, marshmallows, icing, candies and molds for the cereal. I am planning on making this with my girls this weekend and will be back shortly with photos, but in the meantime I thought I'd leave you with some awesome gingerbread houses I've found on Pinterest !

Tutorial how to make a Christmas Necklace

How to make a Christmas Necklace Tutorial

This sweet necklace cna be made with any kind of beads, chain and connector. The possible combinations are endless and easy to make. Stringing the beads on metal pins makes a very sturdy rosary style necklace that will last a lifetime. For this necklace I am using some vintage West German 8 mm pressed glass bead and brass findings.

Difficulty level: Beginner / easy



What do you need for this project?
Tools and supplies

round nose pliers
flat or chain nose pliers
shears or wire cutters
jump ring tool (looks like a ring)
seven 8mm beads more if you use smaller beads
ten 4mm jump rings
about 12 inches of chain 
7 eye pins
clasp
 One bird connector
one lobster clasp
one 7 or 8 mm jump ring for clasp



Use round nose pliers to make a loops

Place a bead on one of the eye pins. Using your shears or wire cutters, clip off the end of the pin leaving about 1/4 inch sticking out



Using the flat nose pliers, bend the sticking out part of the pin are right angles, getting as close as possible to the bead.
Grasp the beaded pin by the eye(loop) with your left hand. Using the round nose pliers in your right hand, twist your wrist to curl the sticking out part of the pin to make an eye.
This is not difficult, but it takes practice. Make several before you start, so you feel comfortable doing it.
You can cut the pin to remove the bead and start over if needed.
Your goal is to make an eye that looks like the first one - same size, same orientation and closed completely. Use the flat nose pliers to straighten and tighten your eye loop. Repeat until you all 7 beads are on their pins.

Now we are going to hook all of the beads together in a rosary style chain using the 4mm jump rings
Using your left hand, hold a jump ring firmly with your flat nose pliers. Using the jump ring tool on your right hand twist your wrist to open jump ring. Add 2 or your beaded pins. Twist your wrist to close the jump ring, making sure the ends line up tightly.
Twist back and forth to line up the ends of the jump ring if you need to.


Continue this process until all of your beaded pins are hooked together in a chain.
Using a ruler, measure your beaded chain. You should have about 5 or 6 inches. If your beads are small, you will need more of them to make a chain this long, or less beads if they are larger.
Now the hard part - you need to do the math . I want my necklace to be 18 inches long. Subtract the length of your beaded chain from 18, and that tells me i need 12 inches of chain, or 6 inches on each side.


Hook the bird connector to one end of your beaded chain with jump ring.

Hook the chain piese to each side of your beaded lenght using the jump rings.
Measure the chain and cut necessary length for each side of the necklace.

The chain I am using has links that open using the jump ring tool. If your chain has soldered links, cut it with the shears.

 




Attach the lobster clasp to one end of the necklace with a jump ring.Attach the 7 mm jump ring to the other end.

The holiday season is upon us and one of my favorite gifts to give is home baked cookies. Some of my  favorites to make are biscotti, decorated sugar cookie cutouts, and spritz cookies. I love to get my kids involved too. And after taking the time to do all this baking, why not package them in the prettiest way by using handmade tags, cards and vintage platters from Etsy

Easy Peasy Spritz Cookies

1/2 cup shortening
1/2 cup butter
3/4 cup sugar
1 egg
1 tsp. vanilla
21/4 cup flour
1/2 tsp. salt
1/4 tsp. baking powder

Cream shortening, butter and sugar together well.  Beat in egg and vanilla.  Gradually blend in dry ingredients which have been sifted together.  Filled cookie press and form on ungreased cookie sheets.  Sprinkle with holiday decorative sugars and bake at 350 degrees F for 10-11 minutes (or until slightly brown on the edges). Yields about 60 cookies.
